The promise

A wrong “safe” can physically harm someone. So our verdicts come from a versioned, publicly-readable ruleset and a human review — with three independent checks that a gluten ingredient can never be marked safe.
A model may help draft the plain-English explanation. It can never set the verdict.

Who checks this
